Matthew Walker, known as Matt, brings extensive hands-on experience in restaurant management, leading pizzerias and food trucks across the Oklahoma City metro. As a longtime operator and co-owner, he has overseen daily operations, staffing, payroll, scheduling, customer relations, and mobile food service logistics for his Oklahoma pizza establishments. Renowned for his people-first leadership style, Matt believes that great pizza is only part of the overall experience — how customers are treated matters just as much. His background in both business and the military has shaped his disciplined, adaptable approach to leadership, empowering his pizza team to navigate growth, challenges, and changing conditions. At My Okie Heart Pizza, Matt ensures every guest interaction reflects our values: quality, community, and Oklahoma pride.

Gayland Toriello is a seasoned culinary and operations professional with extensive experience in restaurant management, leading kitchens and managing high-volume food operations throughout Oklahoma City. His background as an executive chef and sous chef provides him with strong expertise in food quality, inventory control, cost management, staff training, and kitchen efficiency. Recognized for excellence at multiple culinary events, Gayland's commitment to scratch-made food, consistency, and team development shines through in his role as Operations Lead. He oversees food preparation standards, workflow, and back-of-house execution for Oklahoma pizza, ensuring every pizza meets My Okie Heart Pizza’s quality expectations while keeping operations running smoothly and safely.

(Position Currently Not Filled) Once the restaurant opens and this position is filled, the Assistant Manager – Operations Support will play a crucial role in driving the day-to-day operations of My Okie Heart Pizza, supporting both our brick-and-mortar location and mobile pizza trailer. Working alongside the General Manager and Operations Lead, this role ensures that both front- and back-of-house operations run efficiently across all service environments. From enhancing the service flow and customer experience to assisting with staff coordination, systems, and maintaining quality standards, this position is perfect for someone who thrives in a fast-paced setting and values teamwork. As part of our dedicated pizza team, the ideal candidate will help us deliver exceptional Oklahoma pizza to neighborhoods throughout the metro.
